“Pineapple Papaya Chutney”
Ingredients
1 sweet onion chopped
2 tablespoons fresh ginger peeled and diced
3 Jalapeño peppers, diced
1 tablespoon prepared horseradish
1/2 cup of coconut rum
1 pineapple, peeled and diced
1 ripe papaya peeled and diced
1/2 cup of fresh limejuice
1/2 cup of raw sugar
1/4 cup finely chopped fresh cilantro (optional)
Sea salt and fresh ground pepper to taste
- Combine in a saucepan and sauté over medium heat, onions, ginger and jalapenos and horseradish for 6 minutes.
- Add Rum, cook until almost all liquid is evaporated.
- Add pineapple, papaya, limejuice and sugar, bring to a simmer and remove from the heat.
- Add Cilantro if desired, salt and pepper to taste. Set aside or in the refrigerator.
